RECIPE: Canada Day Strawberry Muffins

Strawberries are in season and this year, they are really yummy! It must be the cooler weather we have been having here in Ontario. Yesterday, I took the kids strawberry picking. I gave both kids a small strawberry basket, gave them a short picking lesson and off they went. Even my 2.5 year old picked wonderful, red juicy ones. My kids are in a bit of a rut with breakfast, and I want to change it up so I’ve made them some breakfast bars this morning in hopes to change things up a bit. Ingredients: 1/4 cup butter 1/2 white sugar 1/2 cup packed brown sugar 1 egg 2 egg whites 1 tsp vanilla 2 1/2 bananas, mashed 1 3/4 cups flour 1 tsp baking soda 1/4 tsp baking powder 1/2 cup milk 1/3 cup chocolate chips or raisins (or why not both?) I made these pancakes on Valentine’s Day, cutting them into heart shapes! I made them with the strawberry and banana variation. Multi-Testing Mommy’s Oatmeal Pancakes 2 cups oatmeal2 cups buttermilk1/2 cup flour2 Tbsp sugar (optional)1 tsp baking powder1 tsp baking soda2 eggs, slightly beaten1/4 cup butter, melted (can use even less!) Soak oats and buttermilk up to overnight, as little as 10 minutes. Combine dry ingredients in another bowl. Recipe: Pork Souvlaki

Pork Souvlaki 3 lb pork tenderloin cut into small cubes Marinade: 1/2 cup lemon juice1/2 cup cup olive oil4 cloves garlic, rasped (or minced or finely diced)2 Tbsp dried oregano1/2 tsp each salt and pepper Directions:Combine marinade together and add pork.
