Recipe: Pork Souvlaki

Pork Souvlaki

3 lb pork tenderloin cut into small cubes

Marinade:
1/2 cup lemon juice
1/2 cup cup olive oil
4 cloves garlic, rasped (or minced or finely diced)
2 Tbsp dried oregano
1/2 tsp each salt and pepper

Directions:
Combine marinade together and add pork. Refrigerate for up to 24 hours, stirring occasionally.

To Cook:
Grease a cookie sheet with oil and spread pork on sheet, brushing some marinade over top of pork. Cook in oven using broiler for approximately 12 minutes, turning half way.

Serve With
Greek Salad
Warmed Pitas brushed with olive oil, dusted with Parmesan cheese
Greek Lemon Potatoes (recipe to come)

Night One:
Pork Souvlaki and greek salad on warmed pitas (brushed with olive oil, dusted with Parmesan cheese)
Greek Lemon Potatoes
Night Two:
Pork Souvlaki Wraps (use tortillas instead of pitas and fill with pork, salad, feta and tzatziki)
Leftover potatoes on the side or use them to make a potato salad

    Souvlaki is a big favorite here! And I’ve introduced tzatziki to my boy and he loves it! We actually just got a new bbq….end of season massive sale, pork souvlaki might be on the grill for the first meal! (and I can totally see me cooking souvlaki all winter long on the bbq lol) Thanks for the inspiration!

    I used to eat this quite often if we went to a Greek restaurant in Germany, I love it and tzatziki too. I love the way this gives different meals for two nights and will have to try making this myself, thanks for posting this 🙂
