I made these pancakes on Valentine’s Day, cutting them into heart shapes! I made them with the strawberry and banana variation.
Multi-Testing Mommy’s Oatmeal Pancakes
2 cups oatmeal
2 cups buttermilk
1/2 cup flour
2 Tbsp sugar (optional)
1 tsp baking powder
1 tsp baking soda
2 eggs, slightly beaten
1/4 cup butter, melted (can use even less!)
Soak oats and buttermilk up to overnight, as little as 10 minutes.
Combine dry ingredients in another bowl.
Melt butter, cool slightly.
Add egg to butter and add this wet mixture to the oatmeal mixture.
Combine wet and dry ingredients.
Cook as you would any other pancakes.
Variation
To put some fruit into the pancakes, you can puree some strawberries (4-6) and 1 banana with the 2 cups of milk in a blender prior to soaking the oatmeal! This is delicious and completely omits the need to sugar all together.
Variation
Substitute some whole wheat flour in for some of the white flour
Note: You can also omit the butter all together, it is there for flavour more than anything.
