Shortbread Cookies

Shortbread is one of my all time favourite types of cookies! This recipe is so easy to make and do the cookies ever turn out delicious! They can stay plain OR they can be decorated with holiday “sprinkles”. Shortbread Cookies INGREDIENTS1 lb soft butter1 cup sifted icing sugar1 cup sifted cornstarch3 cups flour DIRECTIONSIn an electric mixer, beat butter and sugar to a creamy mixture. Gradually add the cornstarch. Beat well. Beat and blend in the flour until very smooth mixture. Drop by small tsp onto ungreased cookie sheet. Bake in 275-300 degree oven for 30 minutes. Marachino Cherry Shortbread Squares INGREDIENTSBase:1 cup pastry flour OR 1 cup minus 2 Tbsp all purpose flour1 Tbsp icing sugar1/2 cup butter Filling:1 cup brown sugar1/4 cup flour1/2 cup coconut1/2 tsp baking powder1 cup chopped cherries2 eggs well beaten Icing:1 cup icing sugar1 Tbsp butter1 tsp almond flavouring and a little cherry juice DIRECTIONS Mix the base ingredients and press into a 9 inch square baking pan.
