SINFUL Chocolate Mint Squares

These squares literally get fought over among my family members every year at Christmas! My Mom now cuts these into mini squares so there is “more” to go around.

Chocolate Mint Squares

SQUARE INGREDIENTS
2 squares unsweetened chocolate
1/2 cup butter
1 tsp vanilla
2 eggs
1 cup sugar
1/2 cup flour
1/4 tsp baking powder

ICING INGREDIENTS
1/4 cup butter, softened
1 1/2 cups sifted icing sugar
1 Tbsp cream (or milk)
1/2 tsp peppermint flavouring
green food colouring (can omit)

DIRECTIONS
Step 1: Grease and flour a 9 inch square pan.

Step 2: Melt together 2 squares of unsweetened chocolate and 1/2 cup butter.

Step 3: Beat in 1 tsp vanilla and 2 eggs.

Step 4: Gradually add 1 cup sugar.

Step 5: Stir in 1/2 cup flour and 1/4 tsp baking powder (pre-mix these two ingredients first)

Step 6: Bake 350 degrees for 25 minutes (no more time even if they appear underdone!).

Step 7: Cool squares.

Step 8: Blend together icing ingredients and ice squares.

Step 9: Chill squares.

Step 10: Melt together 4 squares of chocolate and 1 Tbsp butter and spread evenly over squares and icing.

TIP: Cut squares with a knife dipped in boiling water and chill again before lifting out of pan.
