Chocolate and Mint together are my absolute favourite! That is why I absolutely LOVE these cookies!
FYI: Be careful when measuring the peppermint extract! I once made grasshopper pie that tasted like mouthwash!
Chocolate Mint Cookies
INGREDIENTS
3/4 cup butter, softened
1/2 cup icing csugar
2 squares (1 once each, unsweetened chocolate, melted and cooled)
1/4 tsp peppermint extract
1 1/2 cups flour
1 cup mini chocolate chips
DIRECTIONS
- With an electric mixer, cream butter and icing sugar.
- Beat in chocolate and mint extract.
- Gradually add flour.
- Stir in chocolate chips.
- Drop by Tablespoon approximately two inches apart on ungreased cookie sheets.
- Bake at 375 degrees for 6-8 minutes or until firm.
- Cool for 5 minutes before transferring to wire cooling racks.
- Cool completely
Note: The dough will be quite soft
ICING
2 Tbsp butter, softened
1 cup icing sugar
1 Tbsp milk
1/4 tsp peppermint extract
green food colouring (not necessary, but makes them more festive)
DRIZZLE
1/2 cup chocolate chips
1/2 tsp shortening
DIRECTIONS
- Combine all icing ingredients and beat together until smooth
- Spread over cooled cookies
- In a microwave, melt chocolate chips and shortening and stir until smooth.
- With a spoon (or a ziplock bag with a hole cut in the bottom), drizzle over top of cookies

I adore a chocolate & mint combo! If we ever have Purdy’s chocolates in the house, those are the first to go!
