My kids LOVE muffins and I’m even more excited to share that they both love Zucchini Muffins! Who knew that ZUCCHINI MUFFINS of all things could be accepted as part of a delicious dessert? That’s right! My kids happily will accept Zucchini Muffins as a yummy treat after dinner. When I was younger, my Mom used to call Zucchini bread, “Christmas Bread”. Somehow, giving it a fun name made my sister and I much more willing to give the bread a try AND we loved it!
