My kids LOVE muffins and I’m even more excited to share that they both love Zucchini Muffins!
Recently, I was at a client’s house and I admired her MASSIVE zucchini that had been picked fresh from the garden. It was HUGE, as wide around as my arm, absolutely HUGE! I was inspired to get myself some zucchini (sadly, much smaller in size) and do some baking. One favourite baked item that I like to make this time of year when zucchini is in abundance is my Chocolate Chip Banana Zucchini Bread.
I often make a few loaves of this bread, pre-slice it, wrap it and store it in the freezer for school lunches.

For people who enjoy a much sweeter version, here is another Super Moist Zucchini Bread recipe for you to try.
- 2 cups flour
- 3/4 cup brown sugar
- 2 tsp baking soda
- 2 tsp cinnamon
- 2 cups grated zucchini
- 1 apple – peeled, grated
- 3 eggs
- 1/2 cup oil
- 1/2 cup applesauce (unsweetened)
- 2 tsp vanilla
- Mix together dry ingredients.
- Add zucchini and apple, combine.
- Mix together wet ingredients.
- Add wet to dry and stir until combined.
- Bake 350 – 25 minutes
- Makes approximately 20 muffins
TIP: Get your kids involved in helping you to make these muffins. Perhaps let them grate the zucchini and apple OR give them a spoon to stir the batter.
I love baking with zucchini….just seems more satisfying 🙂

I used up the last of my garden zucchini making a batch of these last weekend sorry i never tried then sooner,they are so delicious !
Going to have to try this, might be one easy way to get some zucchini into the family.
