My kids LOVE muffins and I’m even more excited to share that they both love Zucchini Muffins!

Who knew that ZUCCHINI MUFFINS of all things could be accepted as part of a delicious dessert? That’s right! My kids happily will accept Zucchini Muffins as a yummy treat after dinner.

Recently, I was at a client’s house and I admired her MASSIVE zucchini that had been picked fresh from the garden. It was HUGE, as wide around as my arm, absolutely HUGE! I was inspired to get myself some zucchini (sadly, much smaller in size) and do some baking. One favourite baked item that I like to make this time of year when zucchini is in abundance is my Chocolate Chip Banana Zucchini Bread.

I often make a few loaves of this bread, pre-slice it, wrap it and store it in the freezer for school lunches.

Zucchini Muffins

These zucchini muffins are sweet, moist and delicious. They make an excellent snack or addition to a school lunch.
Ingredients
  • 2 cups flour
  • 3/4 cup brown sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 2 cups grated zucchini
  • 1 apple – peeled, grated
  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup applesauce (unsweetened)
  • 2 tsp vanilla
Instructions
  1. Mix together dry ingredients.
  2. Add zucchini and apple, combine.
  3. Mix together wet ingredients.
  4. Add wet to dry and stir until combined.
  5. Bake 350 – 25 minutes
  6. Makes approximately 20 muffins

TIP: Get your kids involved in helping you to make these muffins. Perhaps let them grate the zucchini and apple OR give them a spoon to stir the batter.
