Breakfast is often referred to as the most important meal of the day! This is why I try to ensure that my children get their serving of protein every single morning. One of their favourite breakfast foods is pancakes, but traditional pancakes tend not to have much protein. SO, I decided to come up with a recipe for Protein Packed Pancakes that fills them with protein, but are still very similar to the regular pancakes that they know and love.
This recipe is quite easy as it is all mixed using a blender. The clean up is quick and easy too for rushed school or camp mornings.
This summer, my kids are signed up for a few different summer camps in order to help me survive working from home in the summer. Camp mornings are just as rushed as school mornings, but breakfast continues to be a priority. Often, I will whip up a double batch of pancakes or waffles and store the rest in the fridge or freezer for another day.
Another favourite breakfast meal is “Daddy’s Special Eggs”. I will have to share that recipe with you another time as it is a true hit in our house. So much so that I had to come up with Mommy’s special eggs for mornings when there were no more Daddy’s eggs left!
Protein Packed Pancakes:
delicious, filling and healthy!

- 1 cup oats

- 1 cup cottage cheese

- 1/4 cup buttermilk, milk, almond milk or cashew milk

- 1 tsp vanilla

- 2 eggs

- 1/2 cup flour
- 1 tsp baking powder

- Add all ingredients into a blender and mix well.

- Melt butter or oil in a large skillet over medium heat.

- Turn heat down to medium-low and pour pancake batter into circles in pan.

- Cook until pancakes start to bubble up and are browned on the other side.
- Flip and cook for 1-2 more minutes.
To add an extra nutrient boost to these pancakes, you could add a probiotic powder into the mix OR serve them with this Homemade Probiotic Frozen Yogurt; this way they will also get a serving of FRUIT to start their day!
