My husband enjoys getting creative in the kitchen and he is quite good at it too! This recipe for Mexican Rice is an excellent side dish for tacos, fajitas or any Mexican dish. I’m not going to lie either, it’s also a great way to get a bit more veggies into the kids without them complaining – parenting win, thanks hubby!
A Mexican Rice side dish can go with many meals:
Ribs
Beef Taquitos
and
Taquito Pie to name a few.
My kids love rice so much that we could probably get away with serving it at every meal. That is why I love the variety that Mexican rice provides. Did I mention that it has VEGETABLES in it too?!
- 1 medium onion
- 2 Tbsp oil
- 1 Tbsp butter
- 1 1/2 cups uncooked rice
- 1 cup frozen corn
- 2 tsp cumin
- 1 tsp garlic powder
- 1/4 tsp chili powder
- 4 cups chicken stock
- 450 mL tomato sauce
- Saute together onion, oil and butter.
- Mix 1 1/2 cups rice and stir together.
- Mix spices in a small dish, add to rice and corn.
- Add chicken stock and tomato sauce.
- Bring to a boil. Reduce heat and simmer until dry (approximately 30 minutes).
I encourage you to get creative with your rice dishes! Plain rice is always nice, but there are so many other creations that your family will enjoy.

I have also been known to fry up left over plain rice, add some cheese and an egg and it gets devoured by everyone.
